General Information about Chevre
Chevre is the French name for goat cheese. We produce fresh varieties of Chevre. Chevre is lower in calories than cheese made from cow’s milk. It is easier to digest, as it contains short-chain fatty acids, and people with a lactose intolerance can usually eat goat cheese. It contains calcium, phosphorus, and minerals as in cow’s milk, but has higher levels of potassium, vitamin A, thiamin, and niacin. The body utilizes goat cheese more like a sugar than a fat, and the body is able to convert this food into energy. There are studies theorizing that the consumption of goat cheese may actually reduce cholesterol and increase bone density.

DAIRY LLC Over 900 cheeses were in the competition this year. Amaltheia’s Goat Ricotta was analyzed by the judges on the first day of the show… they said it was perfect!
Amaltheia Dairy LLC has been producing cheese for a California company since December, 2001. In the summer of 2002, they created their own unique products that they are selling now. The product line continues to grow. Several newspapers and magazines have featured our products. Amaltheia Dairy LLC was awarded “Startup Business of the Year” by the Gallatin Development Council in 2003. The Dairy Goat Journal has featured our farm news in 2002 and 2004. Many celebrities love our cheese, with Senator Max Baucus and Governor Judy Martz being big fans also. Every year our cheese goes to the National Dairy Goat Show where it is considered the best cheese in America by most enthusiasts. This year, we are taking our cheeses to the American Cheese Society Competition. We have showcased our products at various functions throughout the United States, with favorable reviews. Wild Oats stores and Trader Joe’s Company are carrying our products. Look for them there, or ask for it at your favorite health food store. We hope you will find our products in Whole Foods, Vitamin Cottage, Albertson’s, Safeway, Lund’s, Kowalski’s, and other nationwide outlets soon. The family of Amaltheia Dairy is always looking to expand our operations, and is working on providing goat butter, yogurt, whey products, and hard cheeses to add to our line. In May, 2004 we started to package our cheese in resealable containers so that our cheese lovers can eat some and save the rest for later. By the end of 2004, Amaltheia Dairy LLC hopes to attain organic certification for its products. We are working with an Amish colony in Montana who will provide the organic hay and other Montana producers for the grains. Look for our new, improved containers, and the organic labels on our products in the future!
